Maple Brown Buns

Maple Brown Buns

½ cup corn meal
½ cup rolled oats
½ cup real maple syrup
1 T salt
½ butter, cut in pieces  (unsalted)
2 ½ cups boiling water
1 ½ T yeast
5 ½ cups flour
2/3 cups wheat germ

Combine corn meal, oats, maple syrup, salt and butter.  Pour boiling water over.  Cool, then add yeast and 2 cups flour.  Beat until smooth.  Let sit for 15 minutes until bubbly.  Add remaining flour.  Knead 3-5 minutes.  Let dough raise 30 minutes.  Divide dough into about 30 balls.  Dip top in wheat germ.  Put on greased cookie sheet.  Push down to flatten.  Let raise.  Cut an “X” on top of the buns just before putting in oven.  Bake at 375° 16-17 minutes.
