Potato Rolls 1 pkg dry yeast ¼ cup warm water 1 cup instant mashed potatoes, prepared 6 T. butter ¼ cup sugar 1 tsp. salt ¾ cup milk 1 egg 3 ¾ cup flour Combine yeast and warm water. Set aside. Mix freshly mixed potatoes (still warm), butter, sugar, salt, milk and egg; stir. Add 2 cups flour and mix well. Add 1 ¾ cups flour and mix in with floured hands until smooth. Cover bowl and let rise 1 hour. Stir down and let rest 10 minutes. Now, either cover with damp cloth and refrigerate until ready to use (up to 1 week) or do the following for immediate use: shape into 1 ½ inch balls with floured finger and place in greased pan, leaving a little space between rolls for rising. Let rise 45 minutes to 1 hour, to desired size. Bake at 400 degrees for 12 minutes. |
