Rich Whole Wheat Rolls Scald: 1 cup milk Add: ½ cup brown sugar or honey ½ cup oil or melted butter 1 ½ tsp. salt Cool to warm (95-110) Stir until dissolved then let stand 10 minutes: 2 pkgs dry yeast in ½ cup warm water 1 tsp. sugar Add to milk mixture: 2 beaten eggs and softened yeast Add gradually: 4 ¼ - 4 ¾ cups unsifted whole wheat flour (enough to make a soft dough which leaves side of bowl) Cover and let rests for 10-15 minutes Knead 10 minutes. Place in greased bowl, cover and let rise 45 minutes or until about double in size. Punch down and let rest 10 minutes. Roll out ¼ inch thick and cut into desired shapes. Place on greased pan, cover and let rise until double in bulk. Bake at 350 for 20-25 minutes. Makes 2 ½ dozen rolls. |
