Divinity   (1)

2 1/2 cups sugar
1/2 cup corn syrup
1/2 cup water
2 egg whites
1 tsp. vanilla

In a heavy saucepan put corn syrup, water and sugar.  Cook over medium heat until spins a thread.  Cook to 255 degrees.  Beat egg whites until stiff but not dry.  Add syrup to the egg whites in a fine stream, beating continually.  Beat until it turns a little dull, not shiny.   Add vanilla.   Don’t add the vanilla until the candy begins to turn or it will never set up.  Drop by teaspoonfuls onto waxed paper.
