Ole Time Fudge Stanna Dapper

1 cup whipping cream
½ cup milk
1/3 cup karo syrup
4 ½ cups sugar
¼ tsp salt
1 ½ tsp vanilla
2 or 3 squres chocolate  (add when mixture starts boiling)

Place liquids in pan first, then add sugar stir and boil.  Cook as fast as you like.  It never hurts to stir candy whie it is boiling.  BUT  DO NOT STIR  WHEN  YOU  REMOVE  FROM  HEAT!

Cook above mixture to soft ball stage, I use candy thermometer and also cold water in dish method.  When ready pour onto cookies sheet or large pyrex baking dish and place in refrigerator to cool.  (Put 1 T. butter on top.)  Dish should be cool on bottom.  (Takes about 45 minutes.  When cool add vanilla, beat until starts to lose glass.  Add nuts, if desired.  Knead and then scoop it out on waxed paper and smooth into desired shape.  Can be rolled or can be formed as centers to be dipped or formed into slab. 

Never scrape pans when pouring out fudge, fondant, etc. to cool as it will make your candy grainy.
