Basic Carrot Cake

Basic Carrot Cake

3 cups finely shredded carrots
1 cup vegetable oil
4 eggs
2 cups sugar
1 tsp cinnamon
½ tsp salt
2 tsp baking powder
½ tsp baking soda
2 cups whole-wheat flour]

Mix together carrots, oil and eggs.  Mix in sugar, cinnamon, salt, baking powder, and soda.  Mix on medium speed for 2 minutes.  Add whole-wheat flour and mix just until moistened.  Bake in a 350 oven for 35-40 minutes.

Cream Cheese Frosting
Combine 8 oz. cream cheese, softened, 2 T milk and 4 cups powdered sugar.  Add 1 tsp vanilla.  Beat until smooth.
