Chocolate Butter Cream Frosting

Chocolate Butter Cream Frosting

1/2 cup egg whites
1 cup sugar
1 1/4 cups butter-cold but not hard
8 oz. semi-sweet chocolate chips, melted, slightly cooled

Cut butter into Tbs.  Put egg whites and sugar into double boiler.  Put over boiling water.  Whisk until sugar is partially dissolved and warm.  Whip in mixer at medium high speed until stiff peaks.  Reduce to medium, beat until room temperature, while beating add butter a Tbs. at a time, scrape occasionally.  When butter is all added go to high, beat until smooth and light.  May curdle-then on medium speed add melted chocolate slowly.  Mix and scrape bowl.
