Pig Pickin’ Cake

            Pig Pickin’ Cake

1 pkg yellow cake mix
¾ cup butter, melted
1 (11-oz) can mandarin oranges, undrained
4 eggs

1 large can crushed pineapple, undrained
3 oz. pkg instant vanilla pudding mix
9 oz. Cool Whip or
2 cups whipping cream-beat until stiff and add 2 T powdered sugar

    Combine cake mix, melted butter and eggs, beat well for about two minutes in mixer.  Add can of mandarin oranges including juice.  Beat into mix.  Place in three greased 9” pans and bake at 350 for 15-20 minutes.

For icing, mix crushed pineapple-including juice and vanilla pudding and blend well.  Fold in Cool Whip or whipped cream.  Frost cake when cool.  Refrigerate.  Best when served cool.
