Sugar and Spice Cake

Sugar and Spice Cake

¾ cup shortening
1 cup sugar
¾ cup firmly packed brown sugar
3 eggs
2 ¼ cups all-purpose flour
1 tsp baking powder
¾ tsp baking soda
½ tsp salt
¾ tsp ground cinnamon
¾ tsp ground cloves
1 cup buttermilk
1 tsp vanilla

Cream shortening; gradually add sugars, beating well at medium speed of an electric mixer.  Add eggs, one at a time, beating well after each addition.
Combine flour and next 5 ingredients.  Add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.  Mix just until blended after each addition.  Stir in vanilla.
Grease two 9-inch round cake pans, and line with parchment paper.  Pour batter into prepared pans; bake at 350° for 30-35 minutes or until a wooden pick inserted in center comes out clean.  Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.  Spread frosting between layers and one top and sides of cake.
