Lemon Ice Box Pie

            Lemon Ice Box Pie

1 cup cream
1 T grated lemon peel
2 eggs
1/3 cup lemon juice
½ cup sugar

Separate eggs.   Mix beaten yolks with sugar, lemon juice and grated peel.  Beat egg white stiff, then lightly mix in yolk mixture.  Whip chilled cream until stiff and carefully fold into egg mixture.  Pour into 8x8 pan lined with spiced graham cracker crumbs.  Freeze.  Serves 6 to 8.

Spiced graham cracker crumbs

Mix together:
¾ cup graham cracker crumbs
½ cup brown sugar
½ tsp nutmeg
¼ tsp allspice
1 tsp cinnamon
¼ tsp cloves
¼ tsp ginger.

Stir in

3 T. melted butter.
Line 8x8 pan, pressing firmly.
