Strawberry Pie

1 baked and cooled 9 inch pie shell

1 pkg (3 oz) cream cheese
1 cup whipping cream
½ cup powdered sugar

1 ½ cups sugar
4 T. cornstarch
¼ tsp. salt
1 ½ cup water
4 T. dry strawberry Jello
4 drops red food coloring
2 pints strawberries, cleaned and sliced

Place cream cheese in small mixing bowl.  Beat until smooth, add powdered sugar and beat.  Whip cream in a separate bowl, then mix with cream cheese mixture.  Spread in pie crust. 

Combine sugar, cornstarch and salt in saucepan.  Blend in water.  Bring to a boil, boil for one minute until mixture is thickened and translucent, stirring constantly.  Remove from heat, stir in Jello and food coloring.  Cover with plastic wrap and chill.  Pour sauce over sliced strawberries, adding as much sauce as you want.  (I don’t use all the sauce, I think it is too much.  I have given you a doubled amount for the sauce because a single sauce recipe isn’t enough but doubled it is too much.)  Spread over cream cheese mixture.  Cover with plastic wrap and chill for 2 hours or until set.
