Chinese New Year Chicken

Chinese New Year Chicken

Marinade:
1 T. soy sauce
1 T. oil
1 T. cornstarch

2 chicken breasts
1 carrot, julienne
1/4 lb. snow peas, julienne
1/2 cup chopped green onion
8 oz. Vermicelli  (spaghetti)

Sauce:
3 T. soy sauce
1 T. sugar
2 T. white vinegar
1/2 tsp. ginger
1/8-1/4 tsp. red pepper

    Cut chicken breasts into strips.  Marinade at least 10 minutes.  Break pasta in half, cook without salt, drain and keep warm.  Stir fry chicken in 1 T. oil and remove.  Add onions and cook for 1 more minute.  Stir in chicken and sauce and toss with pasta.
