Sweet Yeast Rolls
2 pkg. dry yeast
¼ cup water, lukewarm
¼ cup sugar or honey
1 tsp. salt
½ cup butter
1 cup hot milk
4-5 cups flour
2 eggs
Soften yeast in water 5 minutes. Stir until blended. Measure sugar, salt and butter into mixing bowl. Add hot milk and stir, cooling to lukewarm. Stir in 2 cups of flour to make a thick batter and beat 100 strokes. Add yeast and eggs and stir until blended. Add ½ to 2 cups more flour to make dough that is not sticky. Turn onto lightly floured board and knead for 2 minutes or until it is springy. Shape dough into a ball and place in bowl rubbed with shortening. Cover and let rise until double in bulk about 1 ½ hours. Turn onto floured surface and shape into rolls. Place rolls in greased pan, cover, and let rise until double in bulk, about ½ hour. Bake at 400 degrees for 15 minutes or until golden brown. This recipe also works for cinnamon rolls, scones and doughnuts.
