Chicken with White Barbecue Sauce Southern Living Ultimate Cookbook
3 pounds skinned, bone-in chicken breast halves
1 recipe White Barbecue Sauce
Assrange chicken in a shallow dish. Pour 1 cup White Barbecue Sauce over chicken, turning to coat. Cover and marinate in refrigerator 8 hours, turning chicken once.
Remove chicken from sauce, discarding sauce. Grill chicken, covered with grill lid, over medium coals (300-350) 35-45 minutes or until a meat thermometer inserted in thickest part of breast registers 170, turning every 15 minutes. Heat remaining sauce; serve with chicken. Yield: 6 servings. ( I use boneless, skinless chicken breasts. Grilling time is about 8 minutes per side)
White Barbecue Sauce
1 ½ cups mayonnaise
1/3 cup cider vinegar
¼ cup lemon juice
2 T sugar
2 T cracked pepper
2 T white wine Worcestershire sauce
Combine all ingredients in a small bowl; stir with a wire whisk. Cover and chill. Use to baste chicken during grilling. Yield: 2 ¼ cups.
