Rice Pilaf

            Rice Pilaf

1 cup uncooked rice

4 Tbs butter

1 small onion, finely chopped

1 tsp salt

½ tsp pepper

1 tsp thyme

2 ½ cup stock or water

Butter

Chopped parsley

Heat the butter in a heavy saucepan and sauté the onion until it is transparent and soft.  Add the rice and sauté 5 minutes over medium flame, then add the seasonings.  Pour the boiling stock or water and stir.  Cover, and simmer until all the liquid is absorbed and the rice is tender.  Add melted butter to taste and sprinkling of chopped parsley.  Can be doubled.
