Luscious Lemon Pie

1 Cup Sugar

3 Tablespoons Cornstarch

1 Tablespoon Grated Lemon Rind

¼ Cup Butter or Margarine

¼ Cup Fresh Lemon Juice

1 Cup Milk

3 Eggs Yolks, lightly beaten

1 (8 oz.) carton sour cream

1 baked 9-inch pastry shell

Whipped Cream

Garnish:  Grated Lemon Rind

Combine first 7 ingredients in a heavy saucepan.  Cook over medium heat 7 to 8 minutes or until smooth and thickened, stirring constantly.  Remove from heat.

Fold sour cream into filling, and pour into pastry shell; cover and chill at least 3 hours before serving.  Top pie with whipped cream, and garnish, if desired.

Yield:  1 (9 inch) pie.
