Marbled Chocolate Curls
To make marbled chocolate curls, melt 12 oz. semisweet chocolate in top of a double boiler over hot water. Pour onto a smooth surface like marble or an aluminum foil-lined baking sheet. Melt 12 oz white chocolate, and pour over semisweet chocolate layer. Using a small spatula, swirl chocolates to create a marbled effect, covering about a 12 x 9 inch area. Let swirled chocolate stand at room temperature until it feels slightly tacky but not firm. (If chocolate is too hard, curls with break; if too soft chocolate will not curl.) Pull a cheese plane across chocolate to form curls.
