            Spinach Salad with Strawberries and Pecans

1 (10oz) package fresh spinach, torn

1 cup strawberries, halved

1 cup pecan halves, toasted

Poppy Seed dressing

Combine first 3 ingredients, drizzle with Poppy Seed Dressing.  Serve immediately. Yield: 6 servings.

Poppy Seed Dressing

1/3 cup cider vinegar

1/3 cup oil

¼ cup sugar

1 T Dijon mustard

1 tsp salt

½ tsp pepper

1 small onion, coarsely chopped

2 tsp poppy seeds

Process first 7 ingredients in container of an electric blender until smooth, stopping once to scrape down sides.  Stir in poppy seeds.  Yield: about 1 1/3 cups.
