Deluxe Macaroni and Cheese
1 (8 oz) package elbow macaroni
2 cups shredded Cheddar cheese
2 cups cottage cheese
1 cup diced cooked ham
3 T finely chopped onion
¼ tsp salt
¼ tsp pepper
1 (8 oz) carton sour cream
1 egg, lightly beaten
1 cup soft breadcrumbs
2 T. butter, melted
¼ tsp paprika
Cook macaroni according to package directions, drain well. Place macaroni, Cheddar cheese, and next 7 ingredients in a large bowl; stir gently to combine. Spoon into lightly greased 2-quart casserole.
Combine soft breadcrumbs, melted butter, and paprika in a small bowl, stirring well. Sprinkle breadcrumb mixture diagonally across top of casserole, forming stripes. Bake, uncovered, at 350° for 30-40 minutes or until topping is golden. Yield: 6 servings.
