Butterscotch Bark Cake Mary Griffin
Combine:
1 ½ cup boiling water
1 cup quick rolled oats
Let cool.
Melt:
1-6 oz package butterscotch chips
Set aside
Combine:
¾ cup sugar
½ cup shortening
½ cup brown sugar
Beat in:
2 eggs
rolled oats mixture
melted butterscotch chips
Blend in:
1 ½ cup sifted flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
¼ tsp nutmeg
Stir in:
¾ cup raisins
½ cup chopped nuts
Bake in greased 13 x 9 pan
350° for 30-35 minutes
Frosting
Combine:
¼ cup milk
2 T butter
1/8 tsp salt
Bring just to boil
Remove from heat and add:
1-6 oz pkg chocolate chips
1 tsp vanilla
Blend in:
1 ½ cup sifted powdered sugar
