Rice Pudding

            Rice Pudding

2 cups scalded milk

2 eggs slightly beaten

½ cup sugar

1 tsp vanilla

Dash salt

½ cup raisins- boil in a small amount of water first to soften them, drain before adding to pudding

1 cup rice (more or less)

Mix all ingredients together.  Pour into glass oven proof dish.  Bake at 325° for 2 hours.  After the first hour stir and sprinkle cinnamon on top. 

Test for doneness by inserting a knife in the middle of the pudding.  It should come out clean when the pudding is done.
