Chicken Morengo

            Chicken Morengo

4 slices bacon,

boneless, skinless, chicken breasts

½ cup flour

2 tsp salt

¼ tsp pepper

1 medium size onion, chopped

1 clove garlic, minced

1 can (3 or 4oz) mushrooms

2 can tomatoes, blended

¼ cup chopped parsley

few drops bottled red-pepper seasoning

Fry bacon until almost crisp in large frying pan.  Drain, crumble and set aside

Shake chicken in mixture of flour, salt and pepper

Brown chicken in butter or bacon drippings in Dutch oven

Saute onion and garlic until soft in same pan

Drain liquid from mushrooms

Add liquid from mushrooms, tomatoes, parsley and red-pepper seasoning to pan with chicken

Bake 45-60 minutes, covered.  Uncover, sprinkle with mushrooms and bacon
