Cauliflower Gratin
1 medium-size head of cauliflower
2 cups milk
½ tsp salt
1 egg
½ cup grated Swiss cheese
1 T. butter
Salt and Pepper
Trim the cauliflower, separate into flowerets, and cook in the milk and the ½ tsp salt until tender. (10 to 15 minutes)
Drain, reserving 1/3 cup of the milk
Arrange the cooked flowerets in a lightly buttered baking dish. Beat together the egg and reserved milk. Add the cheese and spread over the flowerets. Add salt and pepper. Dot with butter.
Bake until browned and bubbly at 350°. Serve hot.
