Rich Silver Cake

Rich Silver Cake

 2 - 9inch layers                                            2 - 8 inch layers

Sift together  3 ½ cups sifted cake flour           2 ½ cups

                    2 cups sugar                             1 ½ cups

                    1 tsp. salt                                 ¾ tsp

                    5 tsp. baking powder                 3 ½ tsp

Add              1 cup shortening                       ¾ cups

Pour in          1 1/3 cup thin milk                    1 cup

                     (half water)

                    2 tsp. flavoring                          1 ½ tsp

                    (1 ½ tsp. van.  ½ tsp almond)

                    or 2 tsp. vanilla

Beat 2 minutes

Add                    6 egg whites  (3/4 cup)        4 egg whites (1/2 cup)

                    Unbeaten

Beat 2 minutes

Grease and flour pans.  Pour batter in prepared pan.  Batter may appear curdled.  Bake until cake test done.  Temp. 350.  Bake 9 inch layers 30-35 minutes.   Bake 8 inch layers 25-30 minutes.
