White Chocolate Chip Scones

White Chocolate Chip Scones

2 cups flour

¼ cup chilled butter

1/3 cup sugar

½ tsp salt

2 tsp baking powder

½ cup whipping cream

1 large egg

1 ½ tsp vanilla

1 cup white chocolate chips

1 cup dried fruit:  cranberries, apricots, or cherries, chopped nuts  (optional)

Mix dry ingredients, cut in butter until crumbly.  Mix cream, egg, vanilla in small bowl and add to flour mixture.  Knead in bowl with floured hands, chips, chopped nuts, and fruit.  Knead dough on flour sprinkled board 5-6 times.  Drop biscuit-size drops onto ungreased baking dish.  Bake at 375°  for 15-20 minutes until golden brown.
