Colossal Chocolate Chip Cookies
1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 ½ cups uncooked regular oats
1 ½ cups semisweet chocolate chips
½ cups milk chocolate chips
Beat butter at medium speed with a heavy-duty electric mixer until creamy; gradually add sugars, beating well. Add eggs and vanilla; beat well.
Combine flour and next 3 ingredients; gradually add to butter mixture, beating well.
Process oats in a food processor until finely ground. Gradually add to butter mixture, beating well. Stir in chocolate chips.
Shape cookie dough into balls. Place on ungreased baking sheets. Bake at 350° convection oven or 375° traditional bake for 8 to 10 minutes to until lightly browned. Cool slightly on baking sheets; remove to wire racks to cool completely.
