        Pineapple-Glazed Chicken Breasts

1 cup pineapple juice

2 T. brown sugar

1 T. soy sauce

1 tsp. cornstarch

¾ tsp. salt

½ tsp. pepper

6 skinned and boned chicken breasts

¼ cup flour

1 T. butter

Whisk together first 4 ingredients until smooth; set aside

Sprinkle salt and pepper evenly over chicken.  Dust evenly with flour

Melt butter in a large nonstick skillet.  Cook chicken on each side until done.  Remove chicken from pan, and keep warm.  Add pineapple juice mixture to skillet, and cook, whisking constantly, 1 minute or until thickened and bubbly. 

You may return the chicken to the skillet with the sauce and finish cooking the chicken or just heat more.

Serve with rice.
