Apple Squares
4 cups flour
1 tsp. salt
2 cups shortening
1 cup sour cream
6 large cooking apples, peeled, cored and sliced
1 cup sugar
1/2 cup brown sugar
1 1/2 T. lemon juice
1/4 cup graham cracker crumbs
1/4 cup fine, dry breadcrumbs (crushed Rice Krispies)
Combine flour and salt, cut in shortening with pastry blender until mixture is crumbly. Add sour cream; stir with a fork until flour mixture is moistened. Cover and chill.
Combine apples and next 3 ingredients; set aside.
Divide flour mixture in half; roll one portion into a 15x10 inch rectangle on wax paper. Place in a 15x10 jellyroll pan. Sprinkle with graham cracker crumbs and breadcrumbs. Arrange apple mixture over crumbs. Roll remaining pastry into a 16x12 inch rectangle; place over apple mixture. Fold edges under, and crimp. Bake at 375 for 1 hour. Let cool on a wire rack. Cut into 2 inch squares. Yield: about 3 dozen.
