Lemon Barbecued Chicken
2 chicken breasts
¾ tsp salt
½ tsp grated lemon rind
1 tsp Worcestershire sauce
¼ tsp dry mustard
¼ tsp dried oregano
¼ cup vegetable oil
¼ cup lemon juice
1 T chopped green onion
Place chicken breasts in a large zip-top freezer bag. Combine salt and next 4 ingredients in a small bowl. Gradually add oil and lemon juice, stirring well. Stir in green onion. Pour over chicken; seal bag. Marinate in refrigerator 3 hours, turning occasionally.
Remove chicken from marinade, reserving marinade. Place marinade in a small saucepan. Bring to a boil; set aside.
Grill by your favorite method, basting with reserved marinade and turning once.
