Peanut-Butter and Chocolate Kisses

½ cup butter, room temperature

½ cup smooth peanut butter

¾ cup brown sugar

¼ cup sugar

1 egg

1 tsp vanilla

¼ tsp salt

1 ¾ cups flour

1 tsp baking soda

3 T sugar

48 milk-chocolate candy kisses, unwrapped

Preheat oven to 375.  In a medium bowl, beat together butter, peanut butter, brown sugar, ¼ cup sugar, egg, vanilla and salt until light and fluffy.  Add flour and baking soda, beating until thoroughly blended.  Shape dough into 48 balls, using a rounded teaspoon for each.  Roll balls in 3 T. sugar.  Place 2 inches apart on ungreased baking sheets.  Bake 8 to 10 minutes or until light golden.   Immediately top each cookie with a candy kiss, carefully pressing down firmly.  Remove cookies from baking sheets; cool on racks.  Makes 48 cookies.
